The Mosquera siblings took over the farm from their father in 2018 and rebuilt the fermentation house from scratch. They blend a small amount of trinitario into their CCN-51, which gives the cup a brighter, citrus-led top note without losing the deep cocoa core. We buy the entire small-batch micro-lot every February.
