“Entre Nubes” means “between clouds.” The name comes from Cobán in the Alta Verapaz highlands, where cacao grows on misty mountain slopes between 250 and 350 meters. This origin is produced by FEDECOVERA, a federation of 42 cooperatives representing over 3,000 Q’eqchi’ and Poqomchi’ farming families. Every farmer has a vote in their cooperative. Every cooperative has a vote in the federation. The cacao comes from small, family-owned parcels — organic, diversified with cardamom, allspice, and native fruit trees.

The varietal is what they call Acriollado — a local blend of Criollo and Trinitario genetics selected across years of field evaluation. Fermentation follows a protocol developed through dedicated microbiology research, tracking the intersection of temperature and pH to find the exact optimal point. Dried on raised African beds, temperature-regulated through the night.
